Mini Rava Idli



Love this idlis. I make this every fortnight with sagu or chutney. Texture is so good and tastes awesome. Can be made instantaneously and don't have to depend on any processed mixes.

Prep Time: 25 mins
Cooking Time : 15 mins
Cooking complexity : High
 

Ingredients:
Sooji Rava: 2 Cups
Chopped Ginger & garlic: 1 tsp
Chopped Coriander leaves, Curry leaves: 2tsp
Chopped Chillies: 2 tsp
Bengal Gram & Urad dal: 1 tsp(optional)
Ghee: 2 tbsp
Mustard seeds: 1tsp
Hing : 2 pinch
Cashews: as per your choice
Curd : ½ litre
Eno : 2 pinch
Salt: 1 tsp

Method:
Fry Sooji Rava on very low flame for 20 mins or until you get nice aroma.
Heat ghee, add mustard seeds, bengal gram & urad dal,garlic, curry leaves, cashews,hing. Fry well.
Add Sooji rava and mix well.


Mix all these ingredients.
Add Curd ,eno and give it a nice stir. Let this rest for a 10 mins. This will allow to soak curd well in the rava. If you feel its dried a lot, add more curd.

Add 2 – 3 glasses of water in the idli cooker. Grease the idli plates.
And the idli mixture. Cook by closing lid for 15 mins.
Idlis are ready.


Garnish with Carrots or coriander leaves.
Serve with mint chutney.

Chicken Pakoda

I remember cooking this when i was just 13 yrs. Dad used to get all variety of non veg stuff on sunday's.We used to have guests and cousins on sunday.. Everyone used to help in kitchen preparing those yum .When i am bored with Kababs or want to prepare some pakodas , this is what i end up doing.

Prep Time: 10 mins
Cooking Time : 10 mins
Cooking complexity :Medium


Ingredients:

Chicken Breast : 250 gms
Finely chopped onion : 1
Finely chopped coriander leaves: 2Tbsp
 Finely chopped Ginger & Garlic : 1 tsp
Finely chopped green chillies: 3
Gram Flour: 2 Tbsp
Salt: As per taste
Oil for deep frying

Method:

Chop chicken breast in to small pieces.. Grind them to a fine paste in a mixer grinder.
Remove this mixture from the jar on to a bowl.
Add all the above mixture except oil and mix well.
Heat oil in a Kadai. Let this be at medium temp.


Deep fry Pakodas in oil.

Serve with Mint chutney or Ketchup

Eggless Red Velvet Cupcake with Cream cheese frosting

Happy Father's Day. Just baked Red Velvet cake with cream cheese frosting.
Recipe Adapted from Poonam Maria Prem. Thanks Poonam , cake turned out to be very moist and Tejas enjoyed having this.


Ingredients:
 
2 3/4 cups Maida or All Purpose flour 

2 cups Powdered sugar
1/4 cup cocoa powder
2 tsp baking soda
1 3/4 cups + 2 tbsp plain milk
1 cup oil
1 Tbspn vanilla extract
2 Tbspn white vinegar
Red gel color : 4 drops (again depends on the brand)


Method: Pre Heat the oven at 180 degress for 30 mins

Either use Round pans or in cup cake mould. I like preparing on cup cake moulds.


Sift Maida,Cocoa powder,Baking Soda and keep aside.

Mix all wet ingredients with dry ingredients and whisk for 3 mins using hand mixer or blender.

Now bake for 40 mins.



Cream Cheese Frosting:


Cream Cheese , Butter, Icing Sugar (All same proportion)


Blend Butter first and mix cream cheese and whisk them well. Now add Icing sugar and whisk again.


Tips: Frosting should be done once the cake cools down completely.

French Toast

Mom used to have very stressful morning mostly bcoz of me. I was very choosy in my breakfast and my granny used to carry hot food for lunch everyday to school (Rice, Sambar, curd and sabzi). Don't be surprised that i used to have so much during my school days.I used to be very very selective. So, she used to carry all this thinking that i will have either of these,I used to taste just a spoon of rice and run to play with my friends. Pity them and feel sorry.
This is again one such recipes which i used to hog like crazy as a kid :p and it continues even now.


Ingredients:

Bread Slices : 4
Egg :1
Milk: 1 Glass
Sugar: 4 tsp
Oil: 1/2 tsp
Elaichi powder, Nuts : Optional


Method:
 Beat Egg, Milk and Sugar well.
Cut the bread slices edges.
Cut the bread slices as per your desired shape.
Heat Tawa or pan. Brush oil on the pan.
Dip bread slices in milk and egg mixture.Cook on low flame. Turn them after 3mins. Let it turn crispy on both sides.


Sprinkle nuts while serving.

Wheat Dosa / Godhi dose(Kannada)

Day 5 : Kids Special recipes

All the recipes which i am sharing in kids spl are close to my heart. As those were cooked by my mom, granny, great grand mother, dad. These are filled with my childhood memories.

My granny used to wait for us to come back from school. It was same with us as she would prepare something very nice everyday. Later after munching those yummy snacks she used to give 10ps. Yes, u heard right. That was to buy some mints.:). Those were the days of small happiness, get together, cousins, friends. Our kids are missing those bcoz of TV & Gadgets.

This is one of my granny's fav recipes. Very Quick and tasty.

Prep Time: 20 mins
Cooking Time : 10 mins
Cooking complexity : Low

 Ingredients:

Whole wheat flour : 2 Cups
Curd : 1 Cup
Ghee: 1Tbsp
Salt: 1 tsp
Eno : 1/2 tsp
Oil : 2 tsp

For Tadka

Mustard Seeds: 1 tsp
Urad dal & bengal gram : 1 tsp
Red Chillies: 3

Finely Chopped Mint leaves, Coriander leaves, Curry leaves: 2 Tbsp
 Oil

Method:

Mix Ghee, Wheat flour, salt with curd. Add Water to bring it to dosa batter consistency.Ensure there are no lumps in the dosa batter.

Add Eno,tadka and mix well.

Heat dosa tawa, pour the batter. Add 2 drops of oil around the dosa. Cooking by closing the lid.

Dosa is ready to be served. Serve with onion chutney.

Spring Onion Gundpangala (Kannada) /Padu(Telugu)

These yummy small gundapangalas are very easy to make and can be made with lot of variations. I used to love and have this weekly twice during my college days in Bangalore's food Street (VV Puram) .. Yum Yum Yummy. People who are in Bangalore and haven't visited food street , should make a visit soon .

I make these using idli batter. Quick and easy to pack for lunch. 

This tastes well with onion chutney.

Ingredients for Idli Batter:

Idli Rice : 2 cup
Urad Dhal: 1 cup

Ingredients for Gundapangala

Finely chopped Spring onion: 1 cup
Finely chopped green chillies:As per your taste
Finely chopped curry leaves, coriander leaves
Finely chopped coconut : 3 tsp
Salt as per taste
Oil
Eno or Soda( I use Eno instead of soda) : pinch


Method for Idli Batter:

Soak urad dhal and rice separately. I usually soak them around 9 AM while leaving for office and grind them when I am back around 7PM.
Grind urad dhal to fine paste and then add rice and grind to fine paste.
Don’t add lot of water while grinding, it should be of thick consistency.
Take them out to a big bowl. If planning for idli, leave it to ferment overnight. 

Method for Gundapangala:

Heat oil in a kadai, add onion, spring onin, chillies, curry leaves. Fry well
Switch off the stove and add chopped coconut.
Let this cool down and add to the idli batter. (Take 5 cups). Mix well.



Heat Gundapangala pan and add 1/2 tsp oil in all the cavity.

Now add the mixed idli batter mixture and cook on low flame. 
Close the lid and let it cook for 5 mins. Turn the gundapangala and let it cook for 5 more mins.

Gundapangala are ready to be served or packed

Day 3 : Kids Special recipes

When you can make this at your home without any artificial agents, Why go to KFC.? It was during 2004 when KFC had just started in Bangalore having their single outlet in Forum Mall, Koramangla. I used to drive nearly 30 kms one way with my friends just to have their Broast chicken. That was because of the quality and taste.

Now , its just 2 kms from my place and i don't like the place anymore.Enjoy these popcorn's which tastes far better than KFC.

Prep Time: 10 mins
Cooking Time : 10 mins
Cooking complexity : Low

Ingredients:

Chicken breast: 250gms
Chilli powder: 1/2 tsp(optional)
Coriander Powder : 1 tsp
Paprika Powder : 1 tsp
Eggs : 1
Maida : 4 Tbsp
Oil for deep frying
Salt: 1 tsp

Method :

Cut the chicken breast in to small pieces. Now add paprika powder, chilli powder, coriander powder , salt . Mix well.


Let this rest in fridge for an hr. Close this with a tight lid.

Beat egg. Spread Maida on a plate, add a pinch of salt to it and mix well.

Dip the chicken pieces in egg mixture and roll it in Maida.. Repeat this process twice.

Deep fry in oil.
