Eggless Tutti Frutti Cake

Weekends are reserved for baking . Today tried this delicious super moist tutti frutti cake. I used to love Modern Fruit bread during my childhood days. Dad used to always ensure that its stocked up at home for me & sissy to have. Miss modern bread.:(
I had my cousin visit me today and reminded me of this bread. So tried to bake this cake instead of bread:). All the kiddos loved this so much and it was finished in few secs.





Ingredients:

Butter : 5 Tbspn
Flour/Maida: 1 1/4 Cup
Condensed Milk : 1 Cup + 2Tbsp
Milk: 1/2 Cup
Baking Soda: 1/2 Tsp
Baking Powder : 1 1/2 Tsp
Tutti Frutti : 1/2 Cup
Cherries : 5
Salt : 1 Pinch(if unsalted butter used)

Method:

Whisk Butter, Condensed milk, Milk together.

Sieve all the dry ingredients except Tutti frutti & Cherries.

Fold the dry ingredients with wet ingredients.


Grease baking tray and line with butter paper.

Pour the mixture in the baking tray.


Pre Heat the oven at 180 degrees for 20 minutes.

Bake for 35 minutes at 180 degrees. Use tooth pick to check if  its cooked properly.

Let it cool for 20 minutes.

Decorate with Icing sugar  & Cherries on top of this super moist cake.

Coconut Rice

I used to love coconut rice during my school days. Granny used to prepare this for me quite often. Never shared my dabba with my friends when i used to carry this rice. I know its very mean.
Even Tejas loves this and requests me to prepare this weekly once. He likes to have this with dal. Fried coconut tastes soo good in the rice, Try and let me know how it turned out.

Ingredients:
Grated Coconut: 1 Cup
Cooked rice: 2 Cups
Cashews: 10
Green Chillies: 4
Onion : 1
Coriander Leaves finely chopped
Oil : 1Tbsp
Salt as per taste

Method:

Heat oil in a kadai. Fry finely chopped onions and add slit green chillies. Fry well.
Add cashews ,grated coconut, salt. Now fry for a min.
Add rice and mix well.

Switch of the stove and add finely chopped coriander leaves.
Enjoy this with plain dal.

Chicken Lollypop



Ingredients

Chicken Lollypop: 500 gms
Chilli powder: 2 tsp
Orange red food colour : 1 pinch
Ginger garlic paste: 1 tsp
Corn flour: 3 tsp
Gram flour: 1 tsp
Whole Egg: 1
Salt: as per taste

Method:

Mix all  the ingredients and let it rest in fridge for an hour.
Before frying. Let the chicken rest for 30 mins in room temp.

Deep fry in low flame.

Kadale Usli in Kannada (Chana fry)

Mom used to prepare usli during Ganesha festival. Until puja was complete, we were not allowed to eat anything. Dad is a perfectionist, he used to usually do all decorations for Ganesha and finally the puja used to happen by 2PM. Me n sissy used to always have a eye on kitchen for the varieties that was getting prepared. As soon as dad used to complete puja, we used to run to the kitchen and grab usli on to our plates I used to make paper potlis and share it with my all my friends near our house.

There are few wonderful memories filled in all authentic dishes. Don't you agree?

Ingredients:

Kadale or Chana: 1 Cup
Finely chopped onions : 1
Green chillies : 3
Lime Juice: 1tsp
Mustard seeds: 1tsp
Oil : 2 Tsp
Curry leaves: 4

Method:

Soak Chana for 7 hours. Boil chana in the cooker by adding 1 tsp salt for 3 whistles(again depends on the cooker). Intention is to cook well and not make it mushy.

Heat oil in a kadai, add mustard seeds and let it spurt out. Add onion, green chillies, curry leaves and fry well.

Add cooked chana and toss it.
Switch of the gas stove.Add coriander leaves and lime juice.

Flavour Rice

Monday Monday Monday!!!! After 2 days of break with family, dont feel like going to work. Monday mornings are nightmare, Tejas doesnt wake up early. His school bus comes by 7.45 and i leave for office by 9.20 AM. For lazy monday's, here is a simple recipe which will be loved by kids and elders.



Ingredients

Cooked Rice: 1 Cup
Green Chillies paste : 2 tsp
Turmeric powder : 1 tsp
Mustard & Methi seeds powder: 1/2 tsp
Mustard Seeds: 1/2 tsp
Urad Dal , Bengal Gram : 1 tsp
Oil : 2 tbsp
Lemon Juice: 1 tbsp
Salt: as per taste

Method:

Heat oil in a kadai. Add Mustard seeds. After 30 secs , add urad dal, bengal gram. Fry it for 10 secs. Now add Green chilli paste, salt , turmeric powder and mix well.

Now mix cooked rice, lemon juice.
Serve with potato fry.

Mango Lassi

Truly love this lassi. During mango season, this is a must in my kitchen.Usually my guests get to drink this and they love this delight.Tejas never says no to mangoes..He was waiting for Goutam to finish the clicks.



Ingredients:

1 Mango Pulp
Curd: 1 Cup
Sugar: 3 Tbsp
Elaichi Powder: 1/2 tsp

Method:

In a blender mix all the above ingredients and blend for 2 mins.

Mango Lassi is ready to be served.
