Elaichi Chicken

Have you guys ever tried adding elaichi in any chicken dry item? You will fall in love with the flavours of this simple dish.  My craving for chicken never ends. Many times it has happened that i end up getting raw chicken at 9 PM while oming back from office. After a very tiring day, this is the dish which i prepare in a jiffy (less than 20 mins)..



Ingredients :

Chicken: 500 gms
(I like Chicken with bones,you can try with boneless chicken)
Whole Elaichi : 3
Green Chillies: 8 (If you dont like spicy, reduce the no of chillies)
Onion : 3 ( 2 onions julienne cut, 1 for grinding purpose)
Ginger garlic paste : 1 tsp
Curry leaves: 2 strands
Coriander leaves:  Few strands
Turmeric powder : 1/2tsp
Oil : 3 Tbsp
Salt : as per your taste

Method:

Heat oil in a kadai, Add onion, curry leaves , 4 slit green chillies, ginger garlic paste. Fry well.
Add Chicken, salt.Cook well for 15 mins. Dont add water.

To Grind:

Elaichi, 1 onion, 4 chillies, coriander leaves.

Now mix the above grinded paste in to cooked chicken and fry on simmer for 10 more mins.

Nuge Soppu Basaru (Drumstick Leaves Sambar)



This is prepared in my village using farm grown leaves and cooked on earthern pot.
I remember my great grandmother preparing this and serving us with hot ragi balls. Love those childhood days. She used to use pestle to grind all the ingredients. Believe me the taste used to be sooo yummmmm, NV fans will forget having chicken:p
 
This has got lot of nutritional value and very good for kids:)
So mommies, try this yummy Karnataka rural dish and let me know.

Prep Time: 30 mins
Cooking Time : 30 mins

Cooking complexity : High


Ingredients:

Drumstick leaves : 500 gms
Green gram :1 cup
Toor dal : 1 cup 
Grated Coconut : Half coconut
Green chillies:6
Garlic: 10 cloves
Coriander leaves
Onion: 2
Jeera: 1 tsp
Tamarind Juice : 1 tsp 
Oil: 3 tsp
Mustard seeds: 1/2 tsp
Curry leaves:

Method:

Cook toor dal and green gram separately. Toor dal  with 1 glass of water.(to be semi cooked -1 whistle in cooker)
Cook green gram with 2 glasses of water for 3-4 whistles. Add 1/2 tsp salt.



 Drumstick leaves need to be cleaned well by removing all the sticks..
Blanch them for 10 mins by adding little salt .

 Now strain dal, green gram and drumstick together. Collect the water in a bowl. This will be used to make the curry.



Remember there is salt added in greengram n drumstick leaves.

To prepare masala:

Grind grated coconut, jeera, 1 onion, chillies, 2-3 curry leaves,garlic,tamarind, coriander leaves, 2 tsp cooked dal.





Mix the above paste to the dal, green gram & drumstick leaves water.Let it boil well.

Tadka for Green gram, drumstick leaves

In a kadai, heat oil, add mustard seeds, Add 1 finely chopped onion. Fry well. Just take out 1 spoon of the tadka and add to the curry mixture.

After the onion is fried well, add green gram, drumstick leaves and dal mixture and mix well.

Serve with hot rice & ghee:)

Jeera Rice

This is one of the quick recipes which i make when i am rushing to office.


Ingredients:
Cooked Rice: 1 cup
Jeera : 2 tsp
Curry leaves
Ghee: 2 Tbsp
Garlic Pods: 3
Chillies: 3


Method:

Heat Ghee in a Kadai, Add Jeera, curry leaves, Crushed garlic . Fry well until it turns crispy(30 secs).
Now add Slit chillies and fry.

Add rice and salt. Mix well.

Cashews can be added. I don't like cashews so don't add them usually:)

Serve with Dal.

Virgin Mojito

Have sudden guests at home? Try this wonderful non alcoholic quencher - Virgin Mojito. The crushed mint leaves and lemon flavour makes this drink yum..There is bit of variation which i have made by adding black salt instead of normal salt.


Ingredients:

Polo : 2
Mint leaves : 5- 6 leaves
Lemon  - 1
Black Salt : 1/2 tsp

Soda or Any Cola Drink
Ice Cubes

Method:

Crush Polo well .Add mint leaves, Half lemon cut in pieces. Crush them well. Add half lime juice and black salt. Mix well.

Add Soda or any cola drink like pepsi or coke . Serve with loads of crushed ice.

The secret of Virgin Mojito is in Polo and Mint. Don't substitute them:p

Babycorn Cigars

Its raining in Bangalore. Feel like having something different. This was in my to do list for quite some time. Tried this and came out well. The best part is this is not fried, its baked :)
So, stop worrying about calories and try this.

Ingredients:

Baby Corn : 6
Boiled  & Smashed potatoes : 1
Green chillies : 2
Red Chilli Powder : 1 tsp

Bread Crumbs:
Salt to Taste
Corn Flour


Method:

Blanch Baby corn (In a boiling water add Baby corn with little salt and boil for 2 mins)




 In a Kadai, heat 2 tbspn oil, add the blanched baby corn, chilli powder and fry well.


 Outer Covering: In a bowl mix mashed potatoes, chilli powder, salt, finely chopped onion & chillies
Take little potato mixture , flaten them and place the baby corn in between and cover them thoroughly.



Mix 3 tsps corn flour in water. Dip the Baby corn cigars in corn flour mixture and roll over bread crumbs



Pre heat oven at 160 degrees for 10 mins
Bake them at 160 degrees for 25 mins.



Serve this yummy cigars with piping hot coffee.

Raw Mango Drink (Aam Panna


A must try during this summer... This drink will make you go wow . Try maadi and let me know




Ingredients:

Raw Mango : 3
Cumin Powder: 1 tsp
Black salt : 1 tsp
Pepper powder : 1 pinch
Sugar : 6 Tbsp
Ice cubes



Method

Pressure Cook Raw Mango for 4-5 whistles. It should become very soft.Let it cool down.
Remove the mango skin and seeds. Extract the pulp




Add all the above ingredients in to the pulp mixture. Using blender , blend them for a min.

Yummy drink ready. Serve with ice cubes.

Chicken Kabaabs V1.0


To all my non veg friends, who were unhappy seeing me post only veg recipes. I prepare 5 variations of chicken kabaabs. Will post all of them as and when i prepare:)

Chicken dishes are quite common at my place. Atleast weekly twice:p. Goutam loves having these  kabaabs with rasam.



 Ingredients :

Chicken Pieces: 1/2 kg
Ginger garlic paste : 1 tsp
Eggs: 2
Corn flour : 3 tsp
Chilli powder : 3 tsp (I like it spicy)
A pinch of red food colour
Turmeric powder : 1 tsp
Curd : 3 tsp

Method:

Wash the chicken thouroghly and strain all the water out.
Add curd, turmeric powder and salt. Mix well. Let this rest in fridge for 1 hr.Curd acts as meat tenderiser.


After an hour remove the mixture, strain all the excess water let out by curd.

Now add the rest of the ingredients and mix well. Now keep this in fridge for 2 hrs.



Heat oil in kadai on medium flame and deep fry chicken pieces.

Yummy Kaababs are ready.
